Better Exposing Admin Color Scheme

Description

Why?

After some research, it appears that there are no admin color scheme mappings already implemented in GB ​except for a story in Storybook.

And in some tests.

So basically my idea here could be exposing the whole set so it can be used in future iterations of the new admin pages (like the new Fonts page; see ​GB75053)

How?

I've mapped every single variable to each corresponding property.
